More Scones!


I couldn't stop myself from making more 
scones in my mini-scone pan!
This time I threw in a little dark chocolate and some raspberries...yum, yum!
Did I mention I'm in the middle of law school finals and would much rather bake than study?  :)

Oh, I almost forgot...please pardon the 
terrible picture quality!
I've been lazy lately and have taken most of my 
baking pictures with my iPhone.  
Sometimes they turn out pretty good, 
sometimes they don't...this time they didn't! 
Oh well!

The Himalayas






















Just came across this picture and thought I'd share a silly story.

Do you know where my baking career started?
Well, it started in the Himalayas.
In the summer of 2008, I found myself in the middle of India
with a mean craving for cinnamon rolls.
So, what did I do?
I made some cinnamon rolls, of course!
At the time, I really didn't think it was going to work.
Let me tell you, rolling cinnamon rolls out with the side of a 
dirty Nalgene bottle is less than ideal.
But they still tasted pretty beyond yummy
especially compared to everything else I'd been cookin' up over the last month.

I guess that's what happens when you don't really go inside for an entire month.
Okay, maybe a little of it's caked on dirt...but let's just pretend it's all tan.

Touching Tiny Lives


Exciting news!  
In February 2012, I will be moving to Lesotho!  
Are you scratching your head, saying "Lesotho? Where's Lesotho?" 
I'm guessing from the pictures, you've guessed that it's somewhere in Africa
...and if you know how much I love Africa, that's a good guess. 
Well, Lesotho is one of the two tiny countries inside South Africa.  
I just have to say, I'M SO EXCITED!  
I'll be working with an organization called Touching Tiny Lives
 that cares for babies with HIV and does HIV/AIDS 
outreach and education throughout the community.  
Well, this is significant to Jujubee's Bake Shoppe for two reasons: 
1. I won't be baking too many cookies come February 2012 and 
2.  I'll be switching my global cause to Touching Tiny Lives.  
I've loved supporting the Rau Foundation
but I'm excited to start supporting this new organization that close to my heart.

Blueberries, blueberries, blueberries!



Have I ever mentioned that I compulsively buy bakeware?  
Cookie cutters, baking pans, sprinkles...I just can't control myself around the stuff!  
You really shouldn't let me anywhere near the Kitchen Engine!  
This great little, locally-owned baking store is located in the historic Flour Mill
 and is one of my most favorite places to go! 
But, of course, I always walk out of there will something I didn't really need.  
Exhibit #1:  the Silicone Brownie Dish that I used to make some mint brownie bits.
 I mean who really needs a mini-scone pan?!  
Scones turn out just fine without a pan!
Well after months of this little pan going unnoticed in my cupboards, 
I finally pulled it out and baked up these blueberry scones!
Turns out, this mini-scone pan is wonderful!  
It's really easy to just plop the dough in there
...and voila!  Mini...blueberry...scones! 
 Have I mentioned that I also love mini things :)

The April Empowering, Inc. staff meeting brought a 
great opportunity too make some more Spring cookies!
I used a new decorating technique that made this super quick and easy.
 No waiting around for the different layers to dry!  It's wonderful!!
 I'll definitely being using this technique again when 
I have to squeeze cookie decorating in between 
study for law school finals and prepping for social work orals!

Tweet! Tweet, tweety, tweet!  Can't you hear all those birds outside enjoying the Spring air?!
Okay, maybe not if you live here in Spokane, since it snowed yesterday!
Where is Spring, huh?! Huh?!!
They say that we're about to break a record for the latest date to break 60 degrees! Yuck!
Well, if we can't actually enjoy Spring, how about some Spring cookies!
My fellow Empowering, Inc. interns and I hosted our seminar group this past week, 
so I made these little birdies and some blueberry crumbly to keep 'em happy!

Mint Brownies

I really should have made these on St. Patrick's Day, don't you think?!  
Oh well!  I guess I'll just stick 'em in  the recipe file for next year's St. Patrick's Day.
I had to whip up these yummies in the forty-five minutes I had between 
volunteering and our annual Mission Possible picture party.
And the, guess what?!  We were having so much fun, I forgot to get them out of the fridge!  
They're kind of a combo between my usual brownie bits 
Instead of cutting them out with a biscuit cutter, 
I used my new silicon mini-cupcake sheet...pan...thingy.  
I'm not really sure what to call it! Ha ha!
