I love mint cookies!













These Double Chocolate Mint Chip Cookies are the best midnight snack!  
So yummy! 
They're the most delicious right out of the oven!  
Poppin' 'em in the microwave for a few seconds also does the trick!

Did you notice that these pictures were taken outside?!  
Yes, it's finally sunny enough to take pictures outside!
Yes, this was the first week that the weather in Spokane got over 60 degrees!
Yes, I'm very excited about it!

More Scones!


I couldn't stop myself from making more 
scones in my mini-scone pan!
This time I threw in a little dark chocolate and some raspberries...yum, yum!
Did I mention I'm in the middle of law school finals and would much rather bake than study?  :)

I've been lazy lately and have taken most of my 
baking pictures with my iPhone.  
Sometimes they turn out pretty good, 
sometimes they don't...this time they didn't!

Double Chocolate Mint Chip Cookies!



Yummy, yum, yum!
 The second I pulled these cookies out of the oven,
 I knew they were going to be delicious
They turned out to be even more delicious than I expected
...especially warm and gooey right out of the oven! 
 I spotted this recipe a while ago on Cookies and Cups
 and have been thinking about it ever since.  
I mean what could be better than chocolate chips combined with Andes Mints?!  
These cookies made the perfect Christmas evening treat!

Itty Bitty Cupcakes & Kickball


What's the perfect compliment to kickball?!  Well, mini-cupcakes of course.  Mission Possible held the 2nd annual kickball tournament this weekend to raise money for our service work in Central America.  Kickball provides the perfect distraction from the craziness of law school.

Brownie Bits with Raspberry Buttercream























Aren't these the cutest little things you've ever seen?!  They're just the perfect little bit size treats!  I was inspired to make these after my friend, Danielle, brought some delicious little brownie bites to work on Wednesday.  I added some chocolate chips to my favorite brownie recipe and then topped them off with raspberry buttercream frosting.  The raspberry on top added the perfect tart contrast.  And of course, I have to thank my padre for the cute round biscuit cutters that made these treats the perfect size and shape.

Happy Birthday, Amy!

On Monday, HOPE School, a non-profit pre-school for children with hearing loss, celebrated their wonderful teacher's birthday!  For the big event, I whipped up some scrumptious chocolate cupcakes with cream cheese frosting.  Check out these cute little kiddos!

Chocolate and Gingerbread Cookies!

While my traditional sugar cookies are yummy, yummy, yummy, I wanted to try somethin' new.  So I ventured  into the world of chocolate and gingerbread cut-out cookies.  Yum, yum!  I looked over a few recipes and concocted a recipe of my own.  Overall, I was surprisingly happy with the results.  I also had fun doing some marbling on the cookies.
